Korean Version Boy Kibble Dinner (Kimchi & Tofu)

Maybe this could be a boy kibble dinner if I ever have a son?

I’ve been seeing a lot of boy kibble meals going viral. It actually seems like a pretty balanced and nutritious way of eating, and there’s nothing wrong with that… but you know, it just doesn’t make you want to try it 😂

But when I made this dinner (I originally made it for my husband, who will eat anything as long as it’s high protein), I realised… this is basically a boy kibble dish, just with a Korean touch.

It actually turned out so good. I highly recommend using a good-tasting kimchi, since it plays a big role in the dish. (Or maybe not… if you’re not that picky with food 😅)

And it was so easy and quick to make. Highly recommend trying this for your next meal prep!

Ingredients

  • Olive oil
    10g

  • Minced garlic
    30g

  • Medium firm tofu (I used Evergreen medium firm tofu)
    900g

  • 5% fat Lean beef mince
    500g

  • Chopped Kimchi
    500g

  • Egg
    4 pieces

  • Stevia
    5g

  • Dasida (beef stock)
    5g

  • Scallion
    150g

  • Optional : Black sesame

Directions

  • Heat a pan on high, add olive oil and garlic, and stir-fry until fragrant.
  • Add medium-firm tofu, smash it, and stir-fry to reduce the moisture.
  • Add beef mince in the center and cook until browned.
  • Once the meat is cooked, add chopped kimchi and stir-fry for 7–8 minutes until well cooked.
  • When most of the moisture has reduced, lower the heat and make small wells in four corners of the pan. Crack an egg into each spot.
  • Cover with a lid and cook until the eggs are set on the outside.
  • Top with chopped spring onion and black sesame seeds.
  • Divide into 4 servings and enjoy!

Notes

  • You can add rice if you want more carbs, or cheese / sesame oil if you want more fat.
  • Sprinkle nori on top for extra umami (and a little extra protein!)
