High protein Bulgogi Kimbap

Kimbap is one of the most nostalgic foods for Koreans. The problem is, it takes quite a bit of time and effort to make. Whenever I make kimbap, I feel like I need to make at least 10 rolls to make all that preparation worth it!

It’s definitely not a traditional kimbap recipe, but you can make it in just 15 minutes using ingredients you can easily find at your local grocery store. And the taste? Trust me, you won’t regret making this one.

The only downside is that it’s a little higher in calories. So if you’re currently in a calorie deficit, this might not be the best option. But if you’re eating at maintenance or in a bulking phase, this could easily become one of the most satisfying meals you’ll have.

I love making this when I’m craving kimbap but don’t want to spend an hour preparing all the fillings. It’s simple, filling, packed with flavour, and perfect for using up a batch of Crispy Bulgogi.

Ingredients

  • 1 serving Crispy Bulgogi

  • 2 sheets nori seaweed

  • 150g cooked rice

  • A pinch of salt

  • Sesame seeds

  • 5g sesame oil

  • 2 string cheese sticks (40g total)

  • 2-3 small lettuce leaves

  • 50g grated carrot

  • 15g light mayonnaise (I used Hellmann’s Light Mayo)

Directions

  • Season the cooked rice with salt, sesame seeds, and sesame oil.
  • Lay two sheets of nori side by side and evenly spread the rice over the surface.
  • Add the lettuce, Crispy Bulgogi, string cheese, grated carrot, and light mayonnaise.
  • Roll tightly, pressing firmly as you go to keep everything together.
  • Brush a little sesame oil over the outside of the kimbap.
  • Let it rest for 5 minutes before slicing.
  • Serve and enjoy!
