Ingredients
Chopped Lettuce
200 gramDiced Tomatoes
100 gramPumpkin
150 gramWoolworths Heart Smart Extra Lean Beef Mince
150 gramYellow Sweet Corn (Canned)
70 gramGrated Carrot
50 gramBulla Light Sour Cream
20 gramAyam Thai Sweet Chilli Light Sauce
50 gramTaco Seasoning
1 packetOptional: Corn and carrot
(these were the ingredients I added if I had the calories. I eventually got rid of these to save calories as my calories got lower)
Directions
- Preparation
- Prepare your choice of meat. I usually make taco-seasoned beef or kangaroo mince. 1 packet of taco seasoning mix is used per 500g of mince.
- Chop the cos lettuce and tomatoes, and grate the carrots.
- Cut the pumpkin into small pieces, spray lightly with oil, and add a dash of salt. Roast in the oven at 200°C for about 30 minutes (flipping halfway), or until tender and slightly golden.
- Cooking
- Add all the ingredients to a large bowl, adjusting the amounts based on your calorie and macro needs.
Mix well — and enjoy!

- Main ingredients: lettuce, tomatoes, roasted pumpkin and protein source (these were the main ingredients I would adjust if I wanted to increase volume or protein without significantly impacting the calories)
- Dressing
-Sour cream (I would adjust this up and down depending on how many fats I had left at the end of the day)
-Chilli sauce (I would adjust this up and down according to how much volume the salad was) - Calorie and macros are based off of kangaroo mince
