Super low calorie and fat beef bulgolgi 🥩🇰🇷

Ingredients

  • Lean Rump Steak
    300 gram

  • Soy Sauce
    30 milliliter

  • Plum extract
    25 gram

  • Stevia
    20 gram

  • Mirin
    20 gram

  • Minced Garlic
    10 gram

  • Beef Stock Powder
    2 gram

  • Black Pepper
    1 pinch

  • Carrots
    60 gram

  • Enoki Mushrooms
    100 gram

  • Spring Onion
    100 gram

  • Toppings: shredded spring onions

Directions

  • Preparation
  • In a bowl, combine soy sauce, plum extract, stevia, mirin, minced garlic, beef stock powder (or MSG), and pepper.
  • Add the thinly sliced beef and mix well to coat. Let it marinate for at least 15–30 minutes for best flavor.
  • Thinly slice the carrots, trim and halve the enoki mushrooms, and shred or chop the spring onions.
  • Cooking
  • Heat a non-stick pan over medium heat. Add the marinated beef in a single layer.
  • Cook without stirring, flipping the beef only when one side is cooked. This helps the beef stay tender.
  • Once the beef is cooked through, mix in the sliced carrots. Cook for 1–2 minutes until slightly softened.
  • Add the enoki mushrooms and cook for another minute until just tender.
  • Transfer to a plate and garnish with the shredded spring onions. Serve each portion with 150g of cooked rice.

Notes

  • We used thinly sliced lean beef from an Asian store (no fat). If this is not available, you can slice the beef as thinly as possible.
