To all my salad haters out there, I guarantee you that this fresh banh mi chopped salad will change your mind.

Ingredients

  • Raw Lemongrass Chicken Thigh (Lee Lem recipe)
    200 gram

  • Lettuce
    60 gram

  • Cucumbers
    40 gram

  • Carrots
    40 gram

  • Red Onions
    20 gram

  • Spring Onion
    5 gram

  • Coriander
    5 gram

  • Hellmann’s Lighter Than Light Mayonnaise
    15 gram

  • Knorr’s Liquid Seasoning
    5 gram

  • Salt and Pepper
    1 pinch

  • Optional pairing: toasted bread or low carb crackers like cruskits

Directions

  • Preparation
  • Cook the lemongrass chicken (Recipe available on EVERFIT!), and wash and prep all the ingredients you’re going to use.
  • Place all the ingredients on a chopping board and chop until all ingredients are finely chopped and combined.
  • Cooking
  • If you have the calories, toast up some bread or a roll. This pairs really well as it’s pretty much a homemade easy banh mi! Otherwise, if you want something lower calorie, cruskits, low carb bread, or crackers also pair well. Or just eat it by itself.

Notes

  • Lemongrass chicken recipe is available in Lee’s Recipe Book
  • Maggi’s Original Seasoning Sauce can be used instead of Knorr’s Liquid Seasoning
