Ingredients

  • Enoki Mushrooms
    100 gram

  • Soft Silken Tofu
    300 gram

  • Salt
    1.5 gram

  • Eggs
    2 unit

  • Tuna
    5 gram

  • Soy Sauce
    10 gram

  • Mirin
    10 gram

  • Hot Water
    100 gram

  • Shrimp
    150 gram

  • Sesame Oil
    5 gram

  • Garnish (optional): Sesame seeds and green onion

Directions

  • Preparation
  • Chop the enoki mushroom into small pieces.
  • Cooking
  • In a bowl, mash tofu and mix with enoki mushrooms. Season with salt.
  • In another bowl, whisk eggs with tuna extract, soy sauce, and mirin. Add hot water and mix well.
  • Place tofu-mushroom mixture in a microwave-safe bowl. Pour egg mixture on top. Cover with plastic wrap and microwave for 3 minutes.
  • Add shrimp on top, cover again, and microwave for another 3 minutes.
  • Open both sides of the plastic wrap slightly to release steam, then microwave for 1 minute 30 seconds.
  • Drizzle with sesame oil, garnish with sesame seeds and green onion. Serve hot.

Notes

  • I used Evergreen regular tofu!
  • Tuna extract can be replaced to fish sauce or extra soy sauce.
