Ingredients
Enoki Mushrooms
100 gramSoft Silken Tofu
300 gramSalt
1.5 gramEggs
2 unitTuna
5 gramSoy Sauce
10 gramMirin
10 gramHot Water
100 gramShrimp
150 gramSesame Oil
5 gramGarnish (optional): Sesame seeds and green onion
Directions
- Preparation
- Chop the enoki mushroom into small pieces.
- Cooking
- In a bowl, mash tofu and mix with enoki mushrooms. Season with salt.
- In another bowl, whisk eggs with tuna extract, soy sauce, and mirin. Add hot water and mix well.
- Place tofu-mushroom mixture in a microwave-safe bowl. Pour egg mixture on top. Cover with plastic wrap and microwave for 3 minutes.
- Add shrimp on top, cover again, and microwave for another 3 minutes.
- Open both sides of the plastic wrap slightly to release steam, then microwave for 1 minute 30 seconds.
- Drizzle with sesame oil, garnish with sesame seeds and green onion. Serve hot.
Notes
- I used Evergreen regular tofu!
- Tuna extract can be replaced to fish sauce or extra soy sauce.
