Lean Beef Strips
600 gramGarlic
30 gramSoy Sauce
20 gramMirin
10 gramPlum extract
30 gramSesame Oil
15 gramSpring Onion
50 gramPear
50 gramCucumbers
50 gramToppings: raw egg yolk, sesame seeds, extra spring onion
Directions
- Preparation
- Pat the beef dry with a paper towel to remove excess moisture.
- If you’re slicing a chunk of beef yourself, chill it in the freezer for about 10–15 minutes to firm it up slightly—this makes it easier to slice. Then, cut it into thin strips or finely dice it, depending on your texture preference.
- Finely mince the garlic and chop the spring onion.
- Cooking
- In a large mixing bowl, combine the sliced beef with garlic, spring onion, soy sauce, plum extract, sesame oil, and a pinch of salt.
- Mix everything gently but thoroughly to coat the beef evenly.
- Thinly slice pear and cucumber. Serve them on the side or layer them underneath the beef for freshness and crunch.
- Plate the yukhoe nicely and serve it cold right away. Add an egg yolk on top if you like!
Notes
- We found pre-sliced beef for Yukhoe at a Korean grocery store. If you can’t find it, you can slice the beef into thin strips yourself!
- I used soy sauce for soup, but you can use any kind you have—just keep in mind that saltiness can vary, so adjust the amount accordingly!
