Make sure to closely follow the recipe to ensure chicken is not overcooked or undercooked.

Ingredients

  • Chicken Breasts
    500 gram

  • Optional ingredient: Baking soda (refer to preparation)

  • IMPORTANT: for every 100g of chicken, decrease temperature by 5°C.
    500g = 180°C
    600g = 185°C
    700g = 190°C
    800g = 195°C
    900g = 200°C

  • Preparation
  • Optional: Coat your chicken breast in baking soda for 30 minutes and then wash it off before seasoning. This will ensure that it is always going to be tender. However, this can make your chicken extra salty though so make sure to adjust your seasoning accordingly.
  • Season or marinade your chicken.
  • Cooking
  • Cook your chicken breast for 10 minutes according to this table:

    500g = 180°C
    600g = 185°C
    700g = 190°C
    800g = 195°C
    900g = 200°C
  • After 10 minutes, IMMEDIATELY flip and cook for a further 10 minutes with the same settings
  • After 10 minutes, IMMEDIATELY take out the chicken breast and let it rest for a MINIMUM of 10 minutes. Ideally I would rest it until cold to touch to ensure that it cooks properly.
  • Slice or pull the chicken breast and enjoy the most tender and moist breast you’ll ever have in your life 🙂
