Ingredients
Boneless Skinless Chicken Thigh
1 kilogramLemongrass
30 gramGarlic
20 gramFish Sauce
30 gramSoy Sauce
30 gramLakanto Powdered Monkfruit Sweetener
30 gramBlack Pepper

Directions
- Preparation
- Trim the fat and skin off the chicken thigh and place it into a large bowl.
- To the bowl add the minced or chopped lemongrass, minced garlic, fish sauce, soy sauce, monkfruit sweetener, and the grounded black pepper.
- Mix it all together and let it marinate for at least 30 minutes. The longer the better!
- Divide it into containers, and store it in the fridge or freezer and cook it up however you like when needed!
- Cooking
- Place 250–350g of meat in the air fryer (or however much fits), and cook at 180°C for 10 minutes on each side.

- If you can’t get monkfruit sweetener, you can just use brown sugar. It won’t add that much extra calories.
