This lemongrass chicken recipe will save you during your cut! It’s quick and easy to make, but the flavor is absolutely delicious.
It’s super versatile — enjoy it with rice, noodles, or a fresh salad.

Ingredients

  • Boneless Skinless Chicken Thigh
    1 kilogram

  • Lemongrass
    30 gram

  • Garlic
    20 gram

  • Fish Sauce
    30 gram

  • Soy Sauce
    30 gram

  • Lakanto Powdered Monkfruit Sweetener
    30 gram

  • Black Pepper
    5 gram

Directions

  • Preparation
  • Trim the fat and skin off the chicken thigh and place it into a large bowl.
  • To the bowl add the minced or chopped lemongrass, minced garlic, fish sauce, soy sauce, monkfruit sweetener, and the grounded black pepper.
  • Mix it all together and let it marinate for at least 30 minutes. The longer the better!
  • Divide it into containers, and store it in the fridge or freezer and cook it up however you like when needed!
  • Cooking
  • Place 250–350g of meat in the air fryer (or however much fits), and cook at 180°C for 10 minutes on each side.

  • If you can find lemongrass paste, that would make it a lot easier instead of processing the lemongrass yourself.   • If you can’t get monkfruit sweetener, you can just use brown sugar. It won’t add that much extra calories.
