Ingredients
Olive Oil
5 gramMinced Garlic
15 gramGrated Carrot
130 gramCelery
150 gramOnions
150 gramWoolworths Heart Smart Extra Lean Beef Mince
500 gramSalt and Pepper
1 pinchMaggi Rich Gravy Mix
25 gramMashed Potatoes
500 gramOptional: Mozzarella cheese for topping
Directions
- Preparation
- Make your mashed potatoes: Start by preparing the mashed potatoes using your go-to recipe (check the EVERFIT app if you’re using Lee’s!).
- Prep your vegetables: Mince the garlic. Chop the carrot, celery, and onion into small, bite-sized pieces.
- Cooking
- Preheat the oven: Set your oven to 200°C and let it preheat for about 10–15 minutes.
- In a deep pan, heat 5g of olive oil over medium heat. Add the minced garlic and stir-fry until it becomes fragrant and lightly golden.
- Add the chopped carrot and stir-fry for 2 minutes over high heat. Then add the celery, mix well, and cook for another 2 minutes.
- Pat the beef mince dry with a paper towel to remove excess moisture. Add it to the pan along with a pinch of salt and pepper. Stir-fry until the beef is browned and about 80% cooked.
- Stir in the chopped onion, cover with a lid, and let everything cook together until the beef is fully done and the onions are soft.
- When the mixture looks juicy, add the Maggi gravy powder and mix well. Add a splash of water if needed to help it blend evenly.
- Transfer the beef and veggie mixture into a baking dish. Spread it out evenly to create the base layer.
- Spoon the mashed potatoes on top and smooth them out with a spatula. Bake in the preheated oven at 200°C for 15 minutes.
- If you’re using mozzarella, sprinkle it on top and bake for an extra 3 minutes until melted and bubbly.
- Let it cool slightly, divide into 3 portions, and dig in!
Notes
- I used Lee’s mash potato recipe!!! (Recipe ofc available😍)
