Ingredients
Woolworths Pork Fillet Heart Smart
500 gramBaking Soda
25 gramSugar
30 gramWater
1 literSalt
5 gramGround Nutmeg
1 pinchBay Leaf
3 pieceOptional: You can add nutmeg (dash), bay leaf, onion and spring onion when boil the pork for extra flavour.
Directions
- Preparation
- Rub pork fillet with baking soda and let it sit for 20 minutes, then rinse thoroughly.
- Rub evenly with sugar and let sit for 10 minutes, then rinse again.
- In a pot, combine 1L water, 5g sugar, 5g salt, 1g nutmeg, and a few bay leaves.
- Cooking
- Add the pork and boil over high heat for about 15 minutes.
- Turn off the heat and let the pork rest in the hot liquid for 1 hour.
- Remove the pork, pat dry with paper towels, and allow it to cool slightly.
- Wrap the pork tightly in plastic wrap (like rolling kimbap) to shape it neatly.
- Refrigerate for at least 4 hours or overnight. Slice as thinly as possible for serving.
- Serve cold with wraps (ssam), ssamjang, and kimchi, or lightly steam just before eating for a warm version.
