Ingredients

  • Boneless Skin-on Chicken Thighs
    1 kilogram

  • Korean Chicken Soup Pack
    1 pack

  • Spring Onion
    3 piece

  • Onions
    1 unit

  • Mirin
    40 milliliter

  • Minced Garlic
    50 gram

  • Rice
    200 gram

  • Msg Salt
    20 gram

  • Black Pepper
    1 dash

  • Sesame Oil
    20 gram

  • Toppings: Chopped spring onions, sesame seeds

Directions

  • Preparation
  • Boil water and blanch the chicken thighs for a few minutes. This helps remove impurities and reduces any strong odor from the chicken.
  • Rinse the rice thoroughly.
  • Cooking
  • Place the blanched chicken thighs in a slow cooker. Add enough water to fully submerge the chicken.
  • Add the Korean chicken soup pack (wrapped in cloth), spring onion stems, a whole onion, and mirin.
  • Close the lid and cook for 70 minutes using the ‘multi-cook’ or ‘soup’ setting.
  • Once done, remove the soup pack, onion, and spring onions from the pot.
  • While the chicken is still hot, shred it using tongs or forks.
  • Add the rinsed rice, minced garlic, and salt to the pot. Stir to combine.
  • Cook for another 60–80 minutes, depending on your multicooker’s settings.
  • Add chopped spring onions and 2 cups of water to cool it down slightly. Adjust the saltiness with extra salt and pepper, then add sesame oil and mix well.
  • Serve hot. This porridge pairs perfectly with kimchi. Enjoy!

Notes

  • Samgyetang (삼계탕, Korean ginseng chicken soup) Pack is an assorted dried herb mix used to make Samgyetang. It usually includes ginseng, jujube, garlic, and other medicinal herbs. You just add the whole pack to your pot when cooking the chicken. However, You can find it at most Korean grocery stores in the soup or dried goods section!
