Jajangmyeon – Meal Prep

Jajangmyeon is a popular Korean-Chinese noodle dish that typically features thick wheat noodles topped with a savory, thick sauce made from black bean paste (chunjang), diced pork, and vegetables. For this version, we’ve substituted the noodles with udon to make it more accessible and of course, made it calorie friendly 🙂

Jajangmyeon is a popular Korean-Chinese noodle dish that typically features thick wheat noodles topped with a savory, thick sauce made from black bean paste (chunjang), diced pork, and vegetables. Ingredients

  • Potato Spud Lite 25% Less Carbs
    380 gram

  • Carrots
    260 gram

  • Onions
    330 gram

  • Garlic
    60 gram

  • White Cabbage
    400 gram

  • Lean Rump Steak
    780 gram

  • Ground Pepper
    1 pinch

  • Ottogi Black Bean Jjajang Powder
    1 packet

  • Water
    1 cup

  • Udon Noodles
    1 packet

Directions

  • Preparation
  • Chop all vegetables and beef into small, even pieces.
  • Cooking
  • In a non-stick pan over high heat, add the beef, black pepper, and some minced garlic. Stir-fry until the beef is nicely browned.
  • Add carrots, potatoes, onions, and cabbage to the pan. Stir briefly, then cover with a lid.
  • Let everything cook covered until the vegetables are soft (about 8–10 minutes).
  • Open the lid, add black bean sauce to taste. Mix well to coat the meat and veggies evenly.
  • Pour in 1 cup of water and let the mixture boil until the sauce thickens to your liking.
  • Microwave udon noodles according to package instructions. Serve topped with the rich, savory sauce.

Note: The carbs mainly come from the udon noodles so if you want to save calories you can leave them out or use a lower calorie alternative noodle 🙂

Notes

  • You can substitute the Spud Lite potatoes for normal potatoes if you don’t have them.
