Gochujang Spaghetti – Meal Prep

An 8 day meal prep Minseo taught me to help me survive the time she went to Korea without me.

If you’re having 1 serve a day, make sure to freeze 4 just in case it goes off. This meal prep was super easy to make, tastes even better when you top it off with cheese if you have extra calories, and now you can survive for 8 days longer 🙂

Ingredients

  • Spaghetti Pasta
    600 gram

  • Olive Oil
    10 gram

  • Onions
    3 medium

  • Woolworths Heart Smart Extra Lean Beef Mince
    1.5 kilogram

  • Salt
    1 pinch

  • Black Pepper
    1 pinch

  • Leggo’s napoletana with chunky tomato & herbs
    1 jar

  • Leggo’s Creamy Tomato & Mozzarella Pasta Bake Sauce
    1 jar

  • Gochujang Paste
    30 gram

Directions

  • Preparation
  • Dice the onions.
  • In a boiling pot, add a dash of salt and 600g of spaghetti. Cook until the spaghetti is al dente — or until it sticks to the wall when thrown (a fun test!)
  • Drain the spaghetti (make sure to save some spaghetti water for later), then add 5g of olive oil and mix evenly. This helps prevent the noodles from drying out and sticking together.
  • Divide the noodles into 8 servings.
  • Cooking
  • In a pot over high heat, add lean beef mince, minced garlic, sliced onions, salt, and pepper. Cook and stir until the meat is browned.
  • Add 2 jars of tomato pasta sauce, mix well, and bring it to a boil.
  • Stir in gochujang and a splash of reserved pasta water. Let it simmer until it reaches your desired thickness.
  • Divide the sauce evenly over each serving of noodles.
    Now you’ve got 8 days’ worth of delicious meal prep — sorted!.
