- Preparation
- Place the chopped potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Cooking
- Boil the potatoes until very soft and easily pierced with a fork.
- Drain the potatoes well and return them to the hot pot. Let them sit uncovered for 20 minutes to evaporate excess moisture — this step helps prevent watery mash. Once the potatoes have cooled slightly, peel them.
