Recently, I saw a lot of viral mapo tofu noodle recipes and really wanted to try one. But I am not the type of person who strictly follows recipes (hehe), so I changed it a little and turned it into a Korean-style version. I made sundubu jjigae–style tofu noodles, and I want to show you how to make it.
Lee did not like it much at the first bite, since he is known for disliking tofu, but once everything was mixed together, he said it was yum. Lee’s mum also liked the flavour. So if you are a tofu lover, you will definitely enjoy this recipe!

- **Stir-fry Pork mince
Olive oil
15gMince Garlic
20gWhite part of spring onion
20gChilli powder
5gLean Pork mince (5% fat)
500gSoy sauce
15gOyster sauce
15gGochujang
25gStevia
15g- **Tofu cream
Silken tofu
2 pack (700g)Salt
5g- **Noodles
A packet of Tofu noodles
or noodles of your choice (higher calorie)**Optional
Sesame seeds, chopped spring onion
Directions
- Preparation
- Chop the spring onions and mince the garlic.
- Blend the silken tofu with salt until smooth. Set aside.
- Cooking
- Heat a pan and add olive oil.
- On low heat, add the garlic, the white part of the spring onion, and chilli powder.
- Stir gently until the garlic is well sautéed. Be careful not to burn the chilli powder. Lower the heat if needed.
- Increase to medium heat and add the pork mince.
- Add oyster sauce, soy sauce, and gochujang. Mix well and cook until the pork is fully cooked. Once the pork turns golden brown, lower the heat.
- Add stevia and cook for another 1 to 2 minutes, mixing well until everything is evenly combined.
- Prepare the noodles and plate them with the cooked pork and silken tofu sauce. (I microwaved the whole bowl before serving, as I prefer this dish warm.)
- Garnish with spring onion and sesame seeds. Enjoy!

Notes
- You can use any noodles you prefer, such as udon or Hokkien noodles (higher carbs, higher calories). Adjust it based on your macros.
- The macros using 150g of Hokkien noodles are 616 kcal (P44, C70, F18)
