This zucchini frittata was really easy to make, high in protein, and great for meal prep! Strangely, it tasted even better the next day than when it was fresh. I forgot to mix the ham in with the egg and zucchini, so I ended up having it on the side. But I’d definitely recommend chopping the ham and adding it straight into the mixture- it gives the frittata more volume, and a better balance of flavour.

Directions
- Preparation
- Oven – Preheat to 180°C (355°F).
- Zucchini – Grate finely and set aside.
- Cooking
- In a large bowl, combine grated zucchini, eggs, salt, pepper, and grated cheese. Mix well.
- Lightly spray or brush an oven-safe dish with olive oil.
- Pour in the zucchini mixture and top with the prepared tomatoes.
- Bake for about 40 minutes, until set and golden around the edges.
- Rest for 5 minutes before slicing.
- Divide into 4 servings and enjoy warm, served on top of ham slices!
