Low cal Zucchini Frittata with ham

This zucchini frittata was really easy to make, high in protein, and great for meal prep! Strangely, it tasted even better the next day than when it was fresh. I forgot to mix the ham in with the egg and zucchini, so I ended up having it on the side. But I’d definitely recommend chopping the ham and adding it straight into the mixture- it gives the frittata more volume, and a better balance of flavour.

Ingredients

  • Zucchini
    700 gram

  • Tomato
    450 gram

  • Eggs
    6 large

  • Pecorino Romano Cheese
    40 gram

  • Salt
    15 gram

  • Olive oil
    10 gram

  • Leg ham
    400 gram

Directions

  • Preparation
  • Oven – Preheat to 180°C (355°F).
  • Zucchini – Grate finely and set aside.
  • Cooking
  • In a large bowl, combine grated zucchini, eggs, salt, pepper, and grated cheese. Mix well.
  • Lightly spray or brush an oven-safe dish with olive oil.
  • Pour in the zucchini mixture and top with the prepared tomatoes.
  • Bake for about 40 minutes, until set and golden around the edges.
  • Rest for 5 minutes before slicing.
  • Divide into 4 servings and enjoy warm, served on top of ham slices!
